There are many ways to get to Pozo Saloon from the 58. I've mapped out one of the longer, more elaborate routes. There are a few ranches along the way and most of the road is bordered by forest. I've seen deer and even bears along this route with the former being much more common than the latter. Pozo Saloon has some good burgers and has bands on the weekend nights. They're closed during the week.
